Automatic, continuous-cycle machine designed for the pre-salting and salting of speck pieces of different weight and size. The rubbing system with salt and spices consists of non toxic rubber squeegees to enhance pore dilation, which helps release moisture from inside the meat, and to prepare the product for the following dry salting process. The tanks containing the salt used during the rubbing and subsequent dry salting processes are two independent components in order to prevent contamination between the salt used in the rubbing area, which collects moisture from the rubbed product, and the salt used for dry salting. This arrangement is intended to avert clogging by wet salt agglomerates. Each tank features an automatic salt request function: salt is either fed from an external feed unit (silo) or it is loaded manually, with one single electric system. At the bottom of the rubbing station a brush is installed that dispenses and rubs salt on the back of the piece. This brush is powered by two rotors and it is equipped with two smaller side brushes to complete the rubbing process on the other parts of the meat piece. The machine also features a top conveyor, which runs at the same speed as the feed conveyor, to hold the product more firmly. The possibility to fully inspect the machine, to easily remove parts that are considered at risk as they may promote the formation of bacterial contamination and a self-cleaning system to wash internal parts that are difficult to access from the outside make the machine fully hygienic as required by EC standards.
