Semi-automatic, multi-purpose machine designed for simultaneously cutting the leg and de-boning the ham using an “open” (or better known as “country style”) system. A series of pneumatic mechanisms hold the ham in position: while the operator carries out the extraction of the knuckle, the rotating blade of the cutter cuts through the leg; as soon as this is completed, the ham is placed on a rotating board so that the haunch can be extracted, making it easier to clean.
